Baked Egg Yolks

I make the Cinnamon Bread and Garlic Rosemary Bread several times a week.  I love these breads and there is no nut flour or dairy.

Therefore, I have a lot of egg yolks left over.  I have several recipes for the use of egg yolks – which I post to our PSMF Challenge Group and I have come up with a new one I wanted to share.

I am not a fan of egg whites, but I LOVE egg yolks.I tried ‘poaching’ them in the oven.

I fill a muffin pan 1/4 to 1/2 with water.  I then add the egg yolks and I bake them.

 

I bake them at 250 F for 10-12 minutes.  They come out soft and not like hard boiled eggs.  You could bake them for the length of time to cook the way you like them.

 

I store them in the refrigerator and take one out as I want.

Simply Delicious!
