Bacon Cheeseburger Casserole

This clean keto / low carb casserole is easy to prepare and is delicious!

Ingredients

  • 1 lb ground beef
  • 3 oz onion chopped about 1/2 medium onion
  • 6 slices bacon cooked
  • 1 tsp garlic powder or 1 clove minced
  • 1/4 cup chopped dill pickle
  • 3 eggs
  • 1/2 cup mayonnaise
  • 1/2 cup coconut milk or milk of your choice
  • 2 TBS tomato paste or keto ketchup
  • 8 oz cheddar cheese shredded or cheese of your choice

Instructions

  • In skillet, brown ground beef, chopped onion, garlic powder, salt and pepper until cooked
  • Drain the beef mixture then add to mixing bowl
  • Preheat oven to 350 F
  • Chop the bacon and add to the ground beef.
  • Add the chopped pickles and tomato paste and mix well
  • Place ground beef mixture in casserole dish
  • Combine the eggs, mayo, and coconut milk until well blended
  • Sprinkle the shredded cheese over the ground beef
  • Pour the egg mixture over the shredded cheese
  • Bake in a 350 F oven for 35 minutes
  • Remove from oven and let cool for 10 minutes before serving
