Keto Chicken Pot Pie Soup

This recipe is for Chicken Pot Pie Soup, but I have also made it into Turkey Pot Pie Soup.

Both are delicious!

I made this with leftover turkey but it can also be made with rotisserie chicken.

Keto Chicken Pot Pie Soup

Delicious Keto chicken or turkey pot pie soup - made with leftovers or fresh chicken. It is delicious and dairy free!

Ingredients

  • 3 cup chicken stock or turkey stock
  • 1 cup coconut milk or any non-dairy milk or heavy cream
  • 60 grams diced onion 3/4 cup or 2 oz
  • 2 cloves garlic chopped
  • 120 grams celery 1 cup or 4 oz
  • 1 tsp parsley
  • 1 tsp rosemary
  • 1 tsp thyme
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 2 cups shredded chicken or turkey about 2 chicken breasts
  • 1 TBS olive oil

Instructions

  • In a large sauce pan, saute onion, garlic, and celery in olive oil until the onion is translucent.
  • Add chicken broth and spices and bring to a boil.
  • Boil until the celery is soft.
  • Add shredded, cooked chicken and coconut milk and cook for 5 minutes until the chicken and coconut milk has been warmed.
  • Serve with fresh parsley

Notes

This can be made with either chicken or turkey.
If not dairy free, heavy cream can be used instead of coconut milk.
To make a thicker soup, cook some cauliflower florets in broth until soft, blend then add to the soup
