Sicilian Almond Cookies with Almond Flour

These are tradition Sicilian Almond cookies that I ‘ketofied’ by using powdered xylitol instead of sugar.

You can use any powdered keto sweetener for these cookies.

They are crispy on the outside and nice and chewy on the inside – You will love them!

Boy did they bring back memories!

Keto Sicilian Almond Cookies with Almond Flour

These are tradition Sicilian Almond Cookies 'ketofied'. They are a great keto Christmas cookie.

Ingredients

  • 250 grams almond flour
  • 80 grams powdered xylitol or sweetener of your choice
  • 1 tsp almond extract
  • 2 egg whites

Instructions

  • Beat egg whites to stiff peak in medium bowl
  • Add the almond flour, almond extract, and powdered xylitol
  • Mix well to form a dough - you may need to use your hands
  • Roll 1 TBS of dough into a ball and place on a parchment lined baking sheet
  • Lightly press the ball of dough to flatten slightly
  • Bake at 350 F for 8-10 minutes
  • Remove from oven and let cool
  • Enjoy!
