Sicilian Almond Cookies – keto version

I am Sicilian – 100% and I loved these cookies when I was growing up.

This Keto version is just as good as the original.

The key is to not over cook them – they are nice and chewy.

Keto Sicilian Almond Cookies

The Sicilian Almond cookies have been ketofied. They taste just as good as the original. Chewy, great almond flavor, and low carb/keto.

Ingredients

Instructions

  • Beat egg whites until with an electric mixer until stiff peaks form
  • Add pork rind flour, xylitol, and almond extract
  • Mix well until dough comes together. I had to use my hands
  • Roll roughly 1 TBS dough into a ball
  • Placed rolled dough onto parchment lined baking sheet
  • Press dough slightly to flatten a bit.
  • bake at 260 degrees for 15-20 minutes - depending on your oven

Notes

You can use almond flour instead of pork rind flour.  If you do, you can omit the almond extract.  Your nutritional information will be different with almond flour.
Any granular keto sugar can be used instead of xylitol.  I get headaches with other products (erythritol and allulose) so my preferred sweetener is xylitol - and yes I am very careful around my pets.
