Roasted Leg of Lamb

Leg of Lamb is a traditional Easter meal in my family, therefore, I make a leg of lamb at this time.

I had a 5 pound semi-boneless leg of lamb that I cooked for our holiday meal.

I seasoned it with extra virgin olive oil, salt, pepper, garlic powder, and rosemary.  I just sprinkled on and did not measure.

 

I have a wireless thermometer to keep track of the internal temperature.  Any thermometer will do.

It was placed in a 425 F oven for 20 minutes.

After 20 minutes, turn the heat down to 325 F

Cook until the internal temperature reaches your desired ‘doneness’.

Cover with foil and let rest for 20 minutes.

Slice and enjoy!

 

I cooked mine to an internal temperature of 125 F since we like it rare/medium rare.

It takes approximately 15 minutes per pound.  Time may vary depending on your oven so use a thermometer.
