Pumpkin Roll
It’s pumpkin time of the year so I decided to make a pumpkin roll.
This is so good and refreshing – very low carb, clean keto.
I did make it with cream cheese filling, but for a dairy free option, Italian Meringue could be used.

Delicious treat for the pumpkin time of year. It is very light and refreshing - totally nut free and can be made dairy free

Cake Ingredients
- 6 egg whites
- 6 egg yolks
- 30 grams egg white powder
- 1 tsp pumpkin pie spice
- 1/2 tsp gelatin
- 1/2 tsp vanilla
- 165 grams canned pumpkin about 3/4 cup
- 62 grams xylitol
Cream Cheese Filling
- 4 oz cream cheese
- 20 grams xylitol
Instructions
For the cake
- With a hand mixer, beat the egg whites until they form a stiff peak
- Put 6 egg yolks in a bowl
- Beat the egg yolks until they become light and pale
- Gradually add the xylitol and beat until the mixture is very light and cream color
- Stir in the egg white powder, pumpkin, pumpkin pie spice, and vanilla or continue mixing with hand mixer
- Fold the egg whites into the egg yolk mixture until completely mixed
- Line a jelly roll pan with parchment paper
- Spread the batter onto the jelly roll pan and smooth out until even
- Bake in 350 F for 20 minutes
- After 20 minutes, remove the cake from the oven and cover with parchment paper - cool for a few minutes
For the filling
- In a mixing bowl, beat the softened cream cheese and xylitol until smooth
Assembly
- Remove the still warm cake from the jelly roll pan (turn uside down to remove.
- Remove the parchment paper and spread the chream cheese frosting on the cake
- Roll up the cake and refrigerate for a couple of hours
- Cut the pumpkin roll and enjoy
Notes
For a dairy free option, substitute the cream cheese filling with Italian Meringue
