These Keto Cranberry Muffins are so good!

I made my own dried cranberries and just had to make some muffins.

They are made with ground chicken so they are nut free, grain free, gluten free, dairy free, and very low carb!

Keto Cranberry Muffins

These Keto Cranberry Muffins are amazing!. They are made with ground chicken so they are very low carb, gluten free, nut free, and dairy free!

Ingredients

  • 1 lb ground chicken
  • 2 tsp gelatin
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 13 grams egg white powder 2 TBS
  • 6 eggs separated
  • liquid stevia
  • 1/2 cup dried cranberries

Instructions

  • In a medium frying pan, cook the ground chicken.
  • Place the cooked ground chicken in a food processor and let cool.
  • When the chicken has cooled, add the egg yolks, baking soda, and baking powder. Process until smooth.
  • In a large mixing bowl, add the egg whites, egg white powder,gelatin, and stevia.
  • Whip the egg whites to a stiff peak.
  • Add the chicken mixture to the egg whites and combine thoroughly.
  • Add the cranberries and mix well.
  • Spoon the mixture into muffin tins.
  • Bake at 350 F for 30 minutes.
  • Remove the muffins from the oven and cool some before removing them from the tins.
  • Enjoy!

Notes

The nutritional information is just an estimate since they used commercial dried cranberries which are dried with sugar.
I dried my own cranberries using xylitol.
