Keto Caramels

I absolutely LOVE caramels so I decided to make some clean keto caramels.

I used XYLITOL  but you could also use allulose.  Neither Karl nor  I can tolerate allulose so xylitol it is for us!

Do not store them in the refrigerator or they will get grainy and not stay soft.

Keto Caramels

Ingredients

Instructions

  • In a 2 quart sauce pan, melt the butter and xylitol on medium low heat until bubbly - stirring
  • Grease an 8x8 pan or use parchment paper
  • Add heavy cream (be careful it will bubble up)
  • Cook until temperature of 240 F - stirring
  • Remove from heat - stir - pour into 8x8 pan
  • Cool on counter
  • When cool, cut into squares
  • I suggest you not refrigerate or they will become grainy

Notes

I use xylitol but allulose could also be used
I believe erythritol would be grainy
