Grilled Seafood Summer Salad
This refreshing Grilled Seafood Salad is a perfect, light meal for those really hot summer days.
You can use any seafood, but I used calamari (squid), scallops, and shrimp.
I grilled them, but you could bake or lightly fry them – just don’t overcook or seafood becomes rubbery.
With cucumbers and tomatoes, this salad is so good and refreshing!
Refreshing Grilled Keto Seafood Salad
This Grilled Seafood Salad is a refreshing clean keto meal. Perfect for those hot summer days. Made with calamari, shrimp, and scallops! The cucumbers and tomatoes add the summer feel!

Ingredients
- 1 lb scallops
- 12 oz shrimp
- 10 oz calamari
- 1/2 cup red onion
- 3 roma tomatoes
- 2 cloves garlic
- 1 cucumber
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
Instructions
- Chop onion, tomato, and cucumber and place in large bowl
- Mince the garlic cloves and add to the bowl
- Grill the seafood for 3 minutes each side.
- Add seafood to bowl.
- Add olive oil, vinegar, salt, pepper, oregano, and basil to bowl
- Mix well and adjust spices and olive oil and vinegar to your taste.
- Serve and enjoy

This can be made ahead of time for an easy summer meal.
