Keto Chocolate Pound Cake

Ingredients

  • 200 grams almond flour
  • 50 grams cocoa powder
  • 30 grams egg white powder
  • 1/2 tsp baking powder
  • 1 tsp instant espresso powder
  • 135 grams xylitol 75 grams xylitol plus liquid stevia
  • 1/4 tsp molasses
  • 1/2 tsp salt
  • 1/2 cup softened butter
  • 2/3 cup sour cream
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/4 cup cool coffee
  • 1 tsp gelatin

Instructions

  • Preheat oven to 325 F.
  • Line a loaf pan with parchment paper
  • In a medium mixing bowl, mix the dry ingredients except sweetener
  • In a large mixing bowl, beat the xylitol and butter until light and fluffy
  • Add the sour cream and vanilla beating well
  • Add the eggs 1 at a time beating mixture after each addition
  • Add the almond flour mixture and mix well
  • Add the cooled coffee and mix well
  • Pour into loaf pan
  • Bake about 60 minutes or until the top has risen and is firm to the touch
  • Remove from the oven and let cool at least 30 minutes
  • Remove from pan, slice, and enjoy!

Notes

You can use keto brown sugar instead of white granular and omit the molasses
You can use any keto sweetener you like
You can reduce the sweetener to 75 grams and add liquid stevia
