135gramsxylitol75 grams xylitol plus liquid stevia
1/4tspmolasses
1/2tsp salt
1/2cupsoftened butter
2/3cupsour cream
1tspvanilla extract
4eggs
1/4cupcool coffee
1tspgelatin
Instructions
Preheat oven to 325 F.
Line a loaf pan with parchment paper
In a medium mixing bowl, mix the dry ingredients except sweetener
In a large mixing bowl, beat the xylitol and butter until light and fluffy
Add the sour cream and vanilla beating well
Add the eggs 1 at a time beating mixture after each addition
Add the almond flour mixture and mix well
Add the cooled coffee and mix well
Pour into loaf pan
Bake about 60 minutes or until the top has risen and is firm to the touch
Remove from the oven and let cool at least 30 minutes
Remove from pan, slice, and enjoy!
Notes
You can use keto brown sugar instead of white granular and omit the molassesYou can use any keto sweetener you likeYou can reduce the sweetener to 75 grams and add liquid stevia
