I love Eggplant Parmesan but it is a lot of work.
This recipe is so easy to make and tastes just like regular Eggplant Parmesan.
It is clean keto and oh so good!

Easy Peasy Keto Eggplant Parmesan
This Eggplant Parmesan is so easy to make - it is clean keto too!.Just roast and enjoy!

Ingredients
- 1 1.5 lbs eggplant
- 1/4 cup mozzarella cheese
- 1/4 cup tomato sauce
- 1/4 cup olive oil
- salt
Instructions
- Cut the eggplant in half lengthwise.
- Score the eggplant and coat with olive oil.
- Place eggplant on a baking sheet - I covered the baking sheet with aluminum foil for easy clean up.
- Roast the eggplant in a 400 F oven for 30 minutes.
- Remove the eggplant from the oven and top with tomato sauce and cheese.
- Return to oven for about 5 minutes or until the cheese melts.
- Remove from oven and enjoy!
- The eggplant can be sliced and served as an appetizer or just scooped from the eggplant shell.
