Easy Peasy Keto Eggplant Parmesan

This Eggplant Parmesan is so easy to make - it is clean keto too!.
Just roast and enjoy!

Ingredients

  • 1 1.5 lbs eggplant
  • 1/4 cup mozzarella cheese
  • 1/4 cup tomato sauce
  • 1/4 cup olive oil
  • salt

Instructions

  • Cut the eggplant in half lengthwise.
  • Score the eggplant and coat with olive oil.
  • Place eggplant on a baking sheet - I covered the baking sheet with aluminum foil for easy clean up.
  • Roast the eggplant in a 400 F oven for 30 minutes.
  • Remove the eggplant from the oven and top with tomato sauce and cheese.
  • Return to oven for about 5 minutes or until the cheese melts.
  • Remove from oven and enjoy!
  • The eggplant can be sliced and served as an appetizer or just scooped from the eggplant shell.
