Easy Peasy Keto Eggplant Parmesan
This Eggplant Parmesan is so easy to make - it is clean keto too!.

Ingredients

lbs eggplant
1/4
cup
mozzarella cheese
1/4
cup
tomato sauce
1/4
cup
olive oil
salt
Instructions
Cut the eggplant in half lengthwise.
Score the eggplant and coat with olive oil.
Place eggplant on a baking sheet - I covered the baking sheet with aluminum foil for easy clean up.
Roast the eggplant in a 400 F oven for 30 minutes.
Remove the eggplant from the oven and top with tomato sauce and cheese.
Return to oven for about 5 minutes or until the cheese melts.
Remove from oven and enjoy!
The eggplant can be sliced and served as an appetizer or just scooped from the eggplant shell.
