I made it with the peaches from our peach tree that was here when we bought the house – we got 165 pounds of peaches this year, I had to do something with them.

This Low Carb Peach Cobbler is nut free and flour free. It is absolutely delish! It is dairy free too!

Ingredients
- 6 eggs separated
- 62 g xylitol or any sweetener
- 30 g egg white powder
- 1 tsp vanilla
- 1/2 tsp gelatin
- 1 cup pureed peaches 1-2 cups
Instructions
- Separate the eggs into 2 bowls.
- With a hand mixer, whip the egg whites to a stiff peak.
- In another bowl, beat the egg yolks until they are light yellow.
- Add the xylitol to the egg yolks and beat until pale yellow (almost white).
- Add the egg white powder, vanilla, and gelatin to the egg yolks and beat until all ingredients are incorporated.
- Fold the egg yolk mixture into the egg whites 1/3 at a time until no while is showing.
- Lightly grease an 8x8 inch baking pan.
- Pour the mixture into the pan.
- Layer the pureed peaches on top.
- Bake in 350 F oven for 30-35 minutes.
- Let cool slightly.
- Can be served with keto ice cream or sugar free whipped cream.
