Slow Cooker Keto Chicken Curry

I love Chicken Curry so I modified my regular Keto Indian Chicken Curry to make it slow cooker friendly.

It is so yummy and easy to make.  Great for cool fall evenings!

Slow Cooker Keto Indian Chicken Curry

This is just the right combination of spices, coconut milk and chicken to make this perfect!

Ingredients

For the Chicken

  • 2 pounds chicken cubed
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp turmeric
  • 1 medium onion diced 90 grams
  • 2 cloves garlic minced
  • 2 TBS tomato paste
  • 1.5 TBS curry powder
  • 1 tsp salt
  • 13.5 oz coconut milk 1 can
  • 1 tsp cilantro to taste
  • 1/2 cup chicken broth

Instructions

  • In small bowl, the spices
  • Coat the chicken pieces and place in the slow cooker.
  • Add the onion and garlic to the slow cooker
  • In a mixing cup, mix the chicken broth and tomato paste - mix well,
  • Add the chicken broth to the slow cooker.
  • Cook on high for 3-4 hours and on low for 4-6 hours depending on your slow cooker.
  • Test chicken with an instant read thermometer.
  • Stir in the coconut milk and cook on low for 1/2 hour.
  • Serve and enjoy!

Notes

You can use either chicken breast or legs or a combination of the 2.
