These Keto Pickled Red Onions are still crispy with a slight sweet taste along with the tang.
They are so easy to make!

Ingredients

  • 1/2 lb red onion
  • 1/2 cup apple cider vinegar
  • 1 1/2 tsp salt
  • 1 TBS granular sweetener or liquid stevia
  • 1/2 cup hot water

Instructions

  • Slice the onions into thin strips
  • Place the onion slices in a pint jar (or any jar you have)
  • In a measuring cup, measure 1/2 cup of vinegar, add the salt and the sweetener
  • Pour hot water into the vinegar mixture
  • Mix until the salt and sweetener has disolved
  • Pour the vinegar mixture over the onions in the jar
  • Let cool for about 30 minutes
  • Cover and refrigerate over night
  • Enjoy the next day!

Notes

The onions will keep in the refrigerator for at least 3 weeks.
You can use any sweetener you prefer
You can add more or less sweetener to your taste
The recipe is easily doubled.
