It is a refreshing dish on hot summer days – it also makes a great pot luck dish.
Made with egg white noodles – either your own home made of EggLife egg white noodles.

This Keto Summer Pasta Salad is a great dish for those hot summer nights. It also makes a great pot luck dish. It is made with egg white noodles so clean keto and very low carb.

Ingredients
- 9 oz egg white noodles
- 3 oz salami cubed
- 3 oz pepperoni cubes
- 3 oz cheese cubed
- 1 oz olives
- 2 oz artichoke hearts
- 1 tsp dried oregano
- 1 tsp dried basil or fresh basil
- 1/4 cup olive oil
- 3 TBS red wine vinegar
Instructions
- Slice the egg white noodles into bite size pieces (if using EggLife noodles)
- Add all ingredients in a large mixing bowl and mix well
- Enjoy!
Notes
You can use any meat you like - all salami, all pepperoni, or ham
You can use any cheese you like - cheddar, provolone, ...
Add or omit any ingredient - just know the macros will be different
