Keto Rum Balls

I used to make Rum Balls every year at Christmas time.

I have not made any since starting Keto in 2014.  I try not to use too much nut flour, but this year I decided to try making a keto version.

Oh, my goodness!  They are so good!

Keto Rum Balls

These Keto Rum Balls are so easy to make. They taste as good as regular rum balls but they are clean keto.

Ingredients

  • 21 grams cocoa powder 3 TBS
  • 50 grams melted coconut oil 1/3 cup
  • 100 grams finely chopped walnuts
  • 1/2 cup dark rum or rum extract
  • 1/2 tsp vanilla extract
  • 200 grams fine almond flour
  • 25 grams powdered xylitol or any sweetener
  • vanilla stevia

Instructions

  • In a large mixing bowl, combine the dry ingredients
  • Add the melted coconut oil and rum
  • Stir together until a dough forms.
  • Form about 1 tsp of the mixture and roll into a ball.
  • Place on cookie sheet lined with parchment paper.
  • Optional, coat the rum balls in coconut, powdered sweetener, or cocoa powder. I prefer mine just plain.

Notes

If you do not want to use rum - you can substitute rum extract.
I prefer mine without any coating, but you can coat with coconut, powdered sugar, or cocoa.
