Ingredients
- 1 lb skinless boneless chicken breast
- 1 tsp salt
- 1 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp oregano
- 1 TBS red wine vinegar
- 2 TBS olive oil
- 1/2 onion sliced
- 1 cup coconut cream
- 1/4 cup dijon mustard
- 2 TBS Braggs Amino Acid or soy sauce
Instructions
- Cut chicken into 2 inch pieces.
- In a large mixing bowl, combine the chicken pieces, spices, red wine vinegar, olive oil, and onion.
- Coat the chicken well and let marinate for 20-30 minutes
- Heat a large skillet on medium heat and add some olive oil.
- Cook the chicken pieces with the onion for 5 minutes each side.
- In a small bowl, combine the sauce mixture - coconut cream, Braggs aminos, and dijon mustard.
- Pour the sauce mixture into the skillet, lower the heat, cover, and simmer for about 5 minutes.
- Remove from heat and enjoy!
