Made with egg white noodles – either your own home made of EggLife egg white noodles.

Keto Summer Pasta Salad

This Keto Summer Pasta Salad is a great dish for those hot summer nights. It also makes a great pot luck dish. It is made with egg white noodles so clean keto and very low carb.

Ingredients

  • 9 oz egg white noodles
  • 3 oz salami cubed
  • 3 oz pepperoni cubes
  • 3 oz cheese cubed
  • 1 oz olives
  • 2 oz artichoke hearts
  • 1 tsp dried oregano
  • 1 tsp dried basil or fresh basil
  • 1/4 cup olive oil
  • 3 TBS red wine vinegar

Instructions

  • Slice the egg white noodles into bite size pieces (if using EggLife noodles)
  • Add all ingredients in a large mixing bowl and mix well
  • Enjoy!

Notes

You can use any meat you like - all salami, all pepperoni, or ham
You can use any cheese you like - cheddar, provolone, ...
Add or omit any ingredient - just know the macros will be different
