Easy Dairy Free Keto Ice Cream
This is a delicious, creamy dairy free keto ice cream.
Warning about xylitol – it is deadly for dogs so if you have any pets, just be careful when using xylitol. For ice cream, erythritol or monk fruit (which is mostly erythritol) cannot be substituted for the xylitol. If you do, then the ice cream will freeze solid and my crystalize. Some have used allulose instead of xylitol – I cannot use allulose so I have never tried it.
I am editing this because I have made the process even more simple – I just add all ingredients (except guar gum) into a blender and blend until well incorporated.
After the ingredients are blended well, add the guar gum and blend for about 5 seconds.
Add mixture to ice cream maker and freeze according to your brand’s instructions.
If you are adding any additions (chocolate, nuts, …) add just before the ice cream is finished churning.
Place in container and freeze for at least 1 hour.

Easy Dairy Free Ice Cream
6 servings
2 eggs
1/2 cup powdered xylitol (50 grams or 1.8 oz) or if blending can use granular
1.5 c coconut cream (1 13.66 oz can)
Pinch of salt
2 tsp vanilla extract
2 tsp other extract (English toffee better stevia and hazelnut)
1/3 c hemp milk (or any dairy free ‘milk’)
1/8 tsp guar gum (optional but makes it creamier)
Place all ingredients except guar gum into a blender.
Blend until well incorporated.
Add guar gum and blend for about 5 seconds – do not over blend.
Add to ice cream maker when almost frozen mix in additions (nuts, chocolate.)…
Put in the freezer for about 1 hour and it is good to eat.
I used a whole can of coconut cream and topped it off to 2 cups total with hemp milk (or any dairy free ‘milk’).
Alternatively, you can place in blender – first the eggs then the rest of the ingredients except guar gum.
Add the guar gum last and blend for a few seconds.
Macros for the whole recipe
You can subtract the xylitol or any sugar alcohols from the carb count which makes this low carb.
Eliminating the carb count of the sugar alcohol makes each serving 1.8 carbs
