No Noodle Lasagna
Every year my mother would make our favorite dish for your birthday dinner and every year I chose Lasagna.
I LOVE it!
I struggled every birthday since becoming clean keto but I have discovered a way I can stay clean keto and still have my lasagna.
I have a lot of egg yolks left from making my Cinnamon Bread and Garlic Rosemary Bread so I have come up with several ways to use the egg yolks.
I make egg yolk waffles and lately I have been making egg yolk crepes.
I had a lightbulb moment and thought – why not use these crepes instead of noodles in lasagna. So that is what I did.
It is absolutely delicious!
Try it – you will LOVE it!
No Noodle Lasagna
This delicious lasagna is clean keto, low carb, and absolutely amazing. You will never know there are no noodles.

Ingredients
- 18 egg crepes can use egg yolk crepes
- 15 oz tomato sauce
- 16 ounces ricotta cheese
- 1 egg
- 1 tsp garlic powder
- 1 tsp oregano
- 1 lb ground beef
- 8 oz mozzarella cheese
Instructions
- Brown the ground beef and drain
- In a small mixing bowl, combine the 1 egg, ricotta cheese, oregano, and garlic powder
- Spay a 13x9 inch baking pan
- Spread 1-2 TBS sause on the bottom of the pan
- Layer 6 egg crepes over the sauce
- Spoon a layer of ricotta mixture over the egg crepes
- Spoon a layer of ground beef over the ricotta mixture
- Add a layer of grated mozarella cheese
- Add a layer of egg crepe and top with a couple tablespoons of sauce
- Repeat the layers until you have added all cheese and ground beef
- Top with a layer of egg crepe and sauce
- Cover with foil and bake at 375 F for 45 minutes
- Remove the foil and top with some sauce and mozarella cheese
- Bake an additiona 15 minutes uncovered
- Remove from oven and let sit for 10-15 minutes
