Pork Rind Nachos
A great Super Bowl snack, or great for any gathering, these Nachos are clean keto!
I had not had nachos for probably 15 or 20 years when I suddenly started craving them.
Since I do not eat tortilla chips, I had to come up with an alternative that would be clean keto.
I normally do not eat dairy – but there are times when you just need to make an exception – Nachos is one of those times!
I placed the pork rinds on a pizza pan.
I grated the cheese by had since most already grated cheese has starches added to them to prevent clumping.
Not hard to do and much better for you.
I placed half the cheese on the pork rinds – then added cooked ground beef – topping with remaining cheese.
After baking in the oven, the nachos were topped with Guacamole, Salsa, and Sour Cream
Pork Rind Nachos
Ingredients
- 3 ounces pork rinds
- 1/2 pound ground beef
- 4 ounces grated cheese I used colby/monterey jack
Instructions
- Place pork rinds on baking dish such as a pizza pan
- Put half of the grated cheese on the pork rinds
- Brown the ground beef and add Sugar Free Taco Seasoning - see link in notes section
- Top with remaining grated cheese
- Bake at 350 F for 5 minutes - or until the cheese has melted
- Top with Guacamole (see below link), Salsa (link below), and sour cream
