Dark Chocolate Keto Brownies

I was in the mood for some dark chocolate brownies, so I came up with this recipe.

The brownies are moist and delicious.  No dairy or nuts are used.

They are potent little chocolate bites – almost like a cake.

I just put all ingredients into the blender and blended well until there was a smooth batter.

 

Line a greased 8 X 8 baking dish with parchment paper.

bake at 350 F for 20-30 minutes or until toothpick inserted in the middle comes out dry.

Remove from pan when cool and cut into 16 servings.

Dark Chocolate Keto Brownies

These brownies are light, moist, dairy free, and nut free. Quite a tasty treat.

Ingredients

  • 64 grams coconut oil softened or melted
  • 100 grams xylitol or any Keto sweetener
  • 50 grams cocoa powder
  • 1/2 tsp salt
  • 70 grams pork rind flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/2 cup coconut cream
  • 1/2 cup coffee

Instructions

  • Place all ingredients in a blender
  • Blend on high until all ingredients are well incorporated and the batter is shiny
  • Line a greased 8 x 8 baking dish with parchment paper. Greasing the pan helps to secure the parchment paper.
  • Pour the batter into the pan and smooth and level the batter.
  • Bake 350 F for 20-30 minutes or until a toothpick inserted in the middle comes out dry.
  • When the brownies have cooled, remove them from the pan by lifting the parchment paper.
  • Cut into 16 servings
