They are made with ground chicken so they are very low carb.
They are dairy free, clean keto, nut free, low carb, and very tasty!

Keto Zucchini Muffins
These Zucchini Muffins are clean keto, dairy free, nut free, flour free and delish! They are made with ground chicken so they are very low carb.

Ingredients
- 1 lb ground chicken
- 2 tsp gelatin
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 13 grams egg white powder 2 TBS
- 6 eggs separated
- 190 grams zucchini grated
- liquid stevia any sweetener to taste
Instructions
- In a skillet, cook the chicken and place in a food processor.
- Blend until mixture is smooth.
- In a large bowl, whip the egg whites to a stiff peak
- Add all other ingredients (except the zucchini) in the food processor and process until the mixture is smooth.
- Add the chicken, egg yolk mixture to the whipped egg whites and fold in until it is all mixed
- Add the ground zucchini and mix well
- Spoon into muffin tins
- Bake in a 350 F oven for30-35 minutes
- Let cool then remove from muffin tins
- Enjoy!
