Keto Zucchini Muffins

These Zucchini Muffins are clean keto, dairy free, nut free, flour free and delish! They are made with ground chicken so they are very low carb.

Ingredients

  • 1 lb ground chicken
  • 2 tsp gelatin
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 13 grams egg white powder 2 TBS
  • 6 eggs separated
  • 190 grams zucchini grated
  • liquid stevia any sweetener to taste

Instructions

  • In a skillet, cook the chicken and place in a food processor.
  • Blend until mixture is smooth.
  • In a large bowl, whip the egg whites to a stiff peak
  • Add all other ingredients (except the zucchini) in the food processor and process until the mixture is smooth.
  • Add the chicken, egg yolk mixture to the whipped egg whites and fold in until it is all mixed
  • Add the ground zucchini and mix well
  • Spoon into muffin tins
  • Bake in a 350 F oven for30-35 minutes
  • Let cool then remove from muffin tins
  • Enjoy!
