Ingredients
- 2 TBS olive oil
- 120 g diced onion 1 cup
- 2 cloves garlic minced
- 1 tsp salt
- 1 tsp pumpkin pie spice
- 15 oz canned pumpkin 1 can
- 2 cups chicken broth
- 1 cup coconut milk or more to taste
Instructions
- In a saucepan, heat the olive oil over medium heat and saute the onions until they are translucent.
- Add the garlic, spices, pumpkin, and chicken broth.
- Bring to a boil and then simmer for 15-20 minutes
- Puree the soup with an immersion blender (or puree in blender) until smooth.
- Add the coconut milk and heat to warm.
- Serve and enjoy!
Notes
You can use heavy cream, coconut milk, or coconut cream.
The soup will stay in the refrigerator for a few days - just reheat and enjoy!
