Creamy Keto Pumpkin Bisque
This Pumpkin Bisque is amazing!
I made it dairy free, but you could use heavy cream instead of coconut cream.
It is so creamy and delish - everyone will love it.
It is clean keto too!

pumpkin pie spice

canned pumpkin

chicken broth

coconut milk
or more to taste
Instructions
In a saucepan, heat the olive oil over medium heat and saute the onions until they are translucent.
Add the garlic, spices, pumpkin, and chicken broth.
Bring to a boil and then simmer for 15-20 minutes
Puree the soup with an immersion blender (or puree in blender) until smooth.
Add the coconut milk and heat to warm.
Serve and enjoy!
Notes
You can use heavy cream, coconut milk, or coconut cream.
The soup will stay in the refrigerator for a few days - just reheat and enjoy!
