Creamy Keto Pumpkin Bisque

This Pumpkin Bisque is amazing!
I made it dairy free, but you could use heavy cream instead of coconut cream.
It is so creamy and delish - everyone will love it.
It is clean keto too!

Ingredients

  • 2 TBS olive oil
  • 120 g diced onion 1 cup
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 tsp pumpkin pie spice
  • 15 oz canned pumpkin 1 can
  • 2 cups chicken broth
  • 1 cup coconut milk or more to taste

Instructions

  • In a saucepan, heat the olive oil over medium heat and saute the onions until they are translucent.
  • Add the garlic, spices, pumpkin, and chicken broth.
  • Bring to a boil and then simmer for 15-20 minutes
  • Puree the soup with an immersion blender (or puree in blender) until smooth.
  • Add the coconut milk and heat to warm.
  • Serve and enjoy!

Notes

You can use heavy cream, coconut milk, or coconut cream.
The soup will stay in the refrigerator for a few days - just reheat and enjoy!
