Pickled Hard Boiled Eggs

I love hard boiled eggs – eggs in general.

I would hard boil a dozen eggs and keep them in the refrigerator, but had to make sure I ate them before they spoiled.

With pickled eggs, you don’t need to worry about spoilage as they will keep in the refrigerator for months – I like the convenience!

It is so easy to make your own pickled eggs – with no sugar or non-optimal ingredients.

Boil and peal 1 dozen eggs. My jar will hold up to 23 eggs, so I usually make 18 – leaving enough room to shake up the eggs.

Boil the vinegar, water, and spices – let steep for 5 minutes.

Add eggs and vinegar mixture to jar – store in refrigerator for up to a couple of months

Pickled Hard Boiled Eggs

Very easy to make your own pickled eggs without sugar so they are keto and low-carb friendly

Ingredients

  • 12 eggs
  • 2 1/2 cups vinegar (white or apple cider)
  • 1 cup water
  • 1 tsp salt
  • 1 Tablespoon pickling spice

Instructions

  • Hard boil and peel the eggs
  • In a saucepan, bring vinegar, water, salt, and pickling spice to a boil.
  • Turn down heat and simmer for 5 minutes and let cool slightly
  • Place peeled eggs in a jar.
  • Pour the liquid over the eggs.
  • Let cool for 1 hour.
  • Refrigerate for at least 3 days.
  • They will last for several months once refrigerated.

    I just made this for the first time and it turned out well. Would you recommend using the same recipe for other pickles, like bean sprouts or potato chunks, for example?
