Low Carb Gingerbread Loaf
This Gingerbread Loaf is nut free and gluten free. It is made with ground chicken instead of nut flour. NO! It does not taste like chicken - it is soooo good!

Ingredients
- 6 eggs separated
- 1 lb ground chicken
- 2 tsp gelatin
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 2 TBS egg white powder
- stevia
- 1 tsp molasses
- 2 tsp gingerbread spice
Instructions
- Cook the chicken in a medium sauce pan.
- Put the cooked chicken and all the juices in a food processor or blender.
- Process the chicken for a minute or 2.
- Add the dry ingredients, stevia, molasses, and the 6 egg yolks.
- Process until it looks like a batter.
- In a large mixing bowl, whip the egg whites to a stiff peak.
- Add the chicken mixture to the egg whites 1/3 at a time and mix well.
- When the batter in all incorporated, pour into a loaf pan (either lined with parchment paper or a silcone pan.
- Bake at 350 F for 30 minutes.
- Remove from oven and let cool.
- Slice and enjoy!

Notes
If you do not have gingerbread spice mix, use 1 tsp ginger, 1 tsp cinnamon, and 1/4 tsp cloves.
Make sure the egg whites are whipped to a stiff peak or the loaf will collapse after baking.
