Low Carb Gingerbread Loaf
This Gingerbread Loaf is nut free and gluten free. It is made with ground chicken instead of nut flour. NO! It does not taste like chicken - it is soooo good!

Cook the chicken in a medium sauce pan.
Put the cooked chicken and all the juices in a food processor or blender.
Process the chicken for a minute or 2.
Add the dry ingredients, stevia, molasses, and the 6 egg yolks.
Process until it looks like a batter.
In a large mixing bowl, whip the egg whites to a stiff peak.
Add the chicken mixture to the egg whites 1/3 at a time and mix well.
When the batter in all incorporated, pour into a loaf pan (either lined with parchment paper or a silcone pan.
Bake at 350 F for 30 minutes.
Remove from oven and let cool.
Slice and enjoy!
If you do not have gingerbread spice mix, use 1 tsp ginger, 1 tsp cinnamon, and 1/4 tsp cloves.
Make sure the egg whites are whipped to a stiff peak or the loaf will collapse after baking.
