Keto / Carnivore Meatballs

Being Italian, I miss my meatballs so I attempted to make my first keto meatballs in my 7 years being keto.

I used pork rind ‘flour’ instead of breadcrumbs and they came out quite tasty.

The meatballs are carnivore, but you would need to use a gravy or other sauce instead of tomato sauce.

I mixed all the ingredients together (ground beef, pork rind flour, eggs, spices and formed my meatballs.

I was not going to eat them right away so I froze them.  To freeze, I placed them on a baking sheet and put the baking sheet in the freezer for a couple of hours.  I then placed them in a zip lock bag and kept frozen until I was ready to use them.

I placed the frozen meatballs on a baking sheet and baked at 350 F for 20 minutes.

I then placed the meatballs in a slow cooker, topped with tomato sauce, and cooked on low for 3-4 hours.

    

 

When serving, I topped with some pecorino romano cheese.

Keto/Carnivore Meatballs

Delicious keto/ carnivore meatballs. They are carnivore without the tomato sauce. They would be dairy free without the cheese topping. Very tasty!

Ingredients

  • 2 lbs ground beef
  • 2 eggs
  • 13 grams pork rind flour about 1/3 cup
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 jar tomato sauce

Instructions

  • Mix all ingredients together until well blended
  • Form into 1 inch balls
  • Place on parchment paper or foil baking sheet
  • Bake at 350 F for 20 minutes.
  • Place in slow cooker.
  • Top with sauce.
  • Cook on low for 3-4 hours
  • Top with grated cheese

Notes

Meatballs can be frozen and used when needed.  They can be baked while frozen.
Instead of a slow cooker, the meatballs and sauce can be cooked in a saucepan on top of the stove.
For Carnivore - use a carnivore friendly sauce.
For Dairy Free - do not top with cheese.
