Ingredients
- 2 lbs chicken breast 4 small-medium
- 2 tbs olive oil
- 8 cloves garlic
- 1/2 cup chicken broth
- 1 cup coconut milk
- 2 tbs lemon juice
- 1/2 tsp paprika
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- salt
- pepper
Instructions
- Cut the chicken breast into 2-4 pieces depending on the size of the chicken breast
- Season chicken with salt and pepper
- In a medium skillet, fry the chicken pieces in 1 TBS olive oil about 5 minutes each side until fully cooked
- Remove the cooked chicken to a plate
- Add 1 TBS of olive oil to the skillet and cook the garlic until just translucent - do not burn
- Add the chicken broth, coconut milk, lemon juice, paprika, basil, and oregano to the skillet and simmer for 3 minutes.
- Return the chicken to the skillet and spoon the sauce over the chicken
- Serve warm
