Ingredients

  • 2 lbs chicken breast 4 small-medium
  • 2 tbs olive oil
  • 8 cloves garlic
  • 1/2 cup chicken broth
  • 1 cup coconut milk
  • 2 tbs lemon juice
  • 1/2 tsp paprika
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • salt
  • pepper

Instructions

  • Cut the chicken breast into 2-4 pieces depending on the size of the chicken breast
  • Season chicken with salt and pepper
  • In a medium skillet, fry the chicken pieces in 1 TBS olive oil about 5 minutes each side until fully cooked
  • Remove the cooked chicken to a plate
  • Add 1 TBS of olive oil to the skillet and cook the garlic until just translucent - do not burn
  • Add the chicken broth, coconut milk, lemon juice, paprika, basil, and oregano to the skillet and simmer for 3 minutes.
  • Return the chicken to the skillet and spoon the sauce over the chicken
  • Serve warm
