Liver Chips
I do not like liver at all – I don’t like to use the ‘hate’ word, but I think that is the word to describe how I feel about liver.
I have made liver jerky which I was surprised to find I could eat.
The idea of making liver chips came from our FaceBook group – Monica Giroux mentioned how she makes them so I thought I would try to make some.
I have found that I can eat liver chips too – and it is easier for me to make than liver jerky
I have a dehydrator so that is how I dry my chips, but you can use the oven if you do not have a dehydrator.
Process:
Place 1 pound of beef or calf liver in a blender
Add 2 tsp Rib Rub
Add 1/2 – 1 tsp salt
Add 1 tsp black pepper
Blend until it is pretty much liquid.
Pour or spoon about 1 TBS (or tsp if you want smaller chips) onto silicone dehydrator rack ( or you can use parchment paper).
If you do not have a dehydrator, use a baking pan with parchment paper.
For dehydrator – set temp to 165 F – use same for oven or lowest temp your oven will set to.
Dehydrate for 2 hours – turn the chips over and dehydrate (or bake) for 2 more hours.
Great way to get your liver!
