Keto Lemon Blueberry Coffee Cake

This Keto Lemon Blueberry Coffee Cake is so good!
It is nut free and dairy free, made with ground chicken instead of nuts.
This coffee cake goes well with coffee and tea!

Ingredients

  • 1 lb ground chicken
  • 2 tsp gelatin
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 TBS egg white powder
  • 1/2 tsp salt
  • 6 eggs separated
  • 3 TBS lemon juice
  • 1 cup blueberries

Topping

Instructions

  • In a skillet, cook the chicken put in food processor along with the juice and blend for a few seconds
  • Add the egg yolks, baking soda, baking powder, stevia, lemon juice, and salt to the food processor and blend until smooth.
  • In a large bowl, combine the egg whites, egg white powder, and gelatin
  • With a hand mixer (or stand mixer) whip the egg whites to a stiff peak
  • Add the chicken mixture to the whipped egg whites and fold in until it is all mixed
  • Add the fresh blueberries and mix well
  • In a small bowl, combine the topping ingredients (xylitol, egg white powder, and cinnamon)
  • Line a bread pan with parchment paper
  • Pour the half the batter into silicone cake pan
  • Top with some of the cinnamon topping.
  • Pour the rest of the batter into the cake pan and top with more cinnamon mixture.
  • Bake in 350 F for 45 minutes
  • Remove from oven to cool
  • Slice and enjoy!

Notes

I did not use all of the topping mixture but you can add as much as you like
