Stuffed Pepper Soup
I love stuffed peppers and this soup hits the spot.
I like it without any keto rice alternatives, but you can add them if you like.
It is a great warming, fall soup – great for those chilly fall days.
It is so easy to make – I make it in the slow cooker but it can be made on the stove top.
Keto Stuffed Pepper Soup
This Keto Stuffed Pepper Soup is perfect for those chilly fall days. It tastes just like stuffed peppers and is so easy to make. Everyone will love it! Can be made in the slow cooker or stovetop.

Ingredients
- 1 lb ground beef
- 1 onion chopped
- 2 green bell peppers chopped
- 1 tsp garlic powder
- 15 oz can fire roasted tomatoes
- 8 oz tomato sauce
- 2 cups beef broth
- 1 tsp dried basil
- 1/2 tsp oregan
- 1/2 tsp red pepper flakes
Instructions
- In a skillet, brown the ground beef and drain ( I used 90% lean ground beef and just put in the slow cooker.
- Add all ingredients to slow cooker
- Cook on low for 4-6 hours depending on the heat of your slow cooker.
- Serve it up in bowls and enjoy

Notes
Serving suggestions:
You can grate some romano or parmesan cheese on top
If you want to add a keto 'rice' you can. I prefer it without.
