Keto Italian Pistachio Cookies
These Keto Pistachio cookies are so good!They taste like pistachio macaroons - reminds me of my childhood eating cookies from the Italian bakery.

Ingredients
- 121 grams almond flour 1 cup
- 56 grams xylitol or any keto sweetener 1/4 cup
- 49 grams chopped pistachios 1/4 cup
- 2 egg whites
- 1 tsp almond extract
- 1/2 tsp vanilla extract
- pinch salt
Instructions
- Preheat oven to 325 F
- In a small bowl, mix the almond flour, xylitol, pistachios, and salt
- In a large bowl, whip egg whites until a soft peak forms.
- Add the almond and vanilla extract to the egg whites and continue whipping to stiff peak
- Fold the dry ingredients into the egg whites until combines
- Drop mounds of dough onto a parchment lined cookie sheet using a spoon or cookie scoop
- Bake for 15-18 minutes until the edges are golden brown
- Cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely
- Enjoy!
