These Keto Pistachio cookies are so good!
They taste like pistachio macaroons - reminds me of my childhood eating cookies from the Italian bakery.

Ingredients

  • 121 grams almond flour 1 cup
  • 56 grams xylitol or any keto sweetener 1/4 cup
  • 49 grams chopped pistachios 1/4 cup
  • 2 egg whites
  • 1 tsp almond extract
  • 1/2 tsp vanilla extract
  • pinch salt

Instructions

  • Preheat oven to 325 F
  • In a small bowl, mix the almond flour, xylitol, pistachios, and salt
  • In a large bowl, whip egg whites until a soft peak forms.
  • Add the almond and vanilla extract to the egg whites and continue whipping to stiff peak
  • Fold the dry ingredients into the egg whites until combines
  • Drop mounds of dough onto a parchment lined cookie sheet using a spoon or cookie scoop
  • Bake for 15-18 minutes until the edges are golden brown
  • Cool on baking sheet for 5 minutes then transfer to a wire rack to cool completely
  • Enjoy!
