Keto Mason Jar Ice Cream
Sometimes you want a little bit of ice cream and you don’t want to use the ice cream maker since it takes time to prepare.
With an ice cream maker, you have to put the freezing bowl in the freezer for at least 24 hours.
Here is a quick and easy way to make some ice cream – the kids will love making this

Equipment
- Wide mouth mason jar
Ingredients
- 1 cup heavy cream
- 2 TBS xylitol can use allulose
- 1 tsp vanilla extract
- 1/8 tsp salt
Instructions
- Combine all ingredients in a wide mouth mason jar, or any wide mouth jar
- Screw on lid tightly
- Shake vigorously for 5 minutes. The liquid should double in volume
- Freeze for 3 hours
- Scoop and enjoy!
Notes
you can substitute allulose for the xylitol.
If you have dogs, better to use allulose as xylitol is toxic to dogs.
For chocolate, add 1 TBS cocoa powder.

alternatively, I use the handheld mixer to get it into a WHIPPED CREAM and then freeze it!
I have always wondered if the immersion blender would work for this – but just shaking it makes it fun to make – especially for kids – and there is less cleanup
I use erythritol in mine! 🙂
I cannot use erythritol since I get really bad headaches from it, but I usually suggest allulose or xylitol for ice cream since I have heard that erythritol will crystalize. Good to know it will work. thanks
Can you substitute coconut milk in can for the whipping cream?
I have used canned coconut cream but it does not whip up as much as whipping cream. It still tasted great, though.
