Keto Lemon Mousse

We don’t eat dairy very often, but this Keto Lemon Mousse was so good!

It is great as is or frozen.   When frozen, it is like a very light ice cream!

Keto Lemon Mousse

This Keto Lemon Mousse is tangy and sweet. It is made with heavy cream and is great as is or as a frozen dessert.

Ingredients

  • 50 ml lemon juice about 3 lemons
  • 50 grams xylitol any granular sweetener or liquid stevia
  • 1 tsp gelatin
  • 200 ml heavy cream

Instructions

  • In a small saucepan over low heat, combine the lemon juice, sweetener, and gelatin.
  • Heat until mixture becomes thick
  • Chill the lemon mixture (can put in freezer while doing the next step)
  • In a cold bowl with cold beaters, whip the heavy cream
  • When the heavy cream is whipped, add the lemon mixture and mix well.
  • Place mixture in serving bowls and serve or put in refrigerator for future use.
  • If there is any left over mixture, it can be frozen for later.

Notes

Most of the carbs comes from the granular sweetener.
If you use liquid stevia, the carbs are greatly reduced.
This was amazing frozen too!
