Keto Gingerbread Loaf
I love gingerbread so I came up with an amazing Keto Gingerbread Loaf.
It is great toasted with jam or peanut butter.
The texture is great too!
Keto Gingerbread Loaf
Amazing Gingerbread Loaf that is clean keto with no nut flour used. It is made with pork rind flour and tastes great!

Ingredients
- 50 grams pork rind flour
- 25 grams egg white powder
- 1 tsp gelatin
- 6 eggs separated
- 2 tbs gingerbread spice
- 1 tsp vanilla
- liquid stevia or sweetener of your choice
Instructions
- In a small mixing bowl, combine the pork rind flour and gingerbread spice
- In the bowl of a stand mixer, put in the egg whites, egg white powder, gelatin, vanilla, and sweetener. You can use a hand mixer.
- Whip the egg whites on high until stiff peaks form - can take up to 6 minutes
- Set the mixer speed to slow and add the egg yolks
- When the egg yolks are incorporated, add the pork rind flour and gingerbread spice - mix until all incorporated - do not over mix
- Put the mixture into a loaf pan and bake at 350 F for 30 minutes
- Remove from oven and let cool slightly
- Slice and enjoy!
