Keto Blueberry Pie

Karl’s favorite pie is blueberry so I had to try to make a clean keto blueberry pie.

Here it is and it is amazing!

Keto Blueberry Pie

Great clean keto blueberry pie for your Thanksfiving dessert

Ingredients

Egg Crust

Blueberry Filling

  • 630 grams frozen blueberries thawed about 6 cups
  • 60 grams granular sweetener
  • 2 tsp gelatin
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • i TBS lemon juice
  • liquid stevia to taste optional

Instructions

Crust

  • In a medium bowl, add egg whites, and all dry ingredients (do not add yolks yet)
  • Beat egg whites to stiff peak
  • Fold in egg yolks
  • Spoon mixture into pie pan and spread on bottom and up sides
  • Bake in 325 F oven for 5 minutes until crust sets up

Blueberry filling

  • Thaw the blueberries the day before
  • In a large bowl, add all ingredients and mix well
  • Pour blueberry mixture into pie shell
  • Bake at 375 F for 50-60 minutes until blueberry mixture is bubbly
  • Let cook for at least 3 hours
