Keto Blueberry Pie
Karl’s favorite pie is blueberry so I had to try to make a clean keto blueberry pie.
Here it is and it is amazing!
Keto Blueberry Pie
Great clean keto blueberry pie for your Thanksfiving dessert

Ingredients
Egg Crust
- 3 eggs separated
- 1 TBS egg white powder
- 1/4 tsp gelatin
- 1/4 tsp salt
Blueberry Filling
- 630 grams frozen blueberries thawed about 6 cups
- 60 grams granular sweetener
- 2 tsp gelatin
- 1/2 tsp cinnamon
- 1/4 tsp salt
- i TBS lemon juice
- liquid stevia to taste optional
Instructions
Crust
- In a medium bowl, add egg whites, and all dry ingredients (do not add yolks yet)
- Beat egg whites to stiff peak
- Fold in egg yolks
- Spoon mixture into pie pan and spread on bottom and up sides
- Bake in 325 F oven for 5 minutes until crust sets up
Blueberry filling
- Thaw the blueberries the day before
- In a large bowl, add all ingredients and mix well
- Pour blueberry mixture into pie shell
- Bake at 375 F for 50-60 minutes until blueberry mixture is bubbly
- Let cook for at least 3 hours
