Egg Yolk Waffles

I have been seeing all these pictures of chaffles which look great – however, I am mostly dairy free so I didn’t want to make any waffles with cheese.

I bought a Dash Mini waffle maker and decided to experiment.

I finally came up with a recipe that both I and Dr Karl really like.  It is not a sweet waffle, but we did use it for hamburger buns.

They made a great sandwich and the possibilities are endless – I can see BLT’s in my future.

If you want a sweet breakfast waffle, you can add sweetener.

Egg Yolk Waffles

These waffles are dairy free, nut free, gluten free and make a great bun for burgers. They are both keto/lowcarb and carnivore!

Equipment

  • waffle maker

Ingredients

  • 6 egg yolks
  • 30 grams bacon fat
  • 1/4 tsp baking powder

Instructions

  • Whisk egg yolks until liquid
  • Melt bacon grease
  • Add melted bacon grease, egg yolk, and baking powder
  • Heat waffle maker - I used a Dash Mini.
  • Pour batter onto waffle maker
  • Cook until done (will vary on waffle maker and thickness of batter)
  • Remove from waffle maker and enjoy!
  • I made 4 waffles with this recipe

Notes

For a sweet waffle, you can add sweetener.
If you are not dairy free, you can use butter instead of bacon grease.
This is clean keto, low carb, as well as carnivore

    These were easy and super tasty. I like them better than chaffles-they are lighter. I added some maple extract and a bit of sweetener. Great way to use those extra egg yolks.

      I was making some yesterday and thought – maybe I will add maple extract and sweetener – I didn’t but good to know it works out well.
      I have made chocolate with some cocoa powder and chocolate extract which were good.
      I guess it is time to do more experimenting.

    I made half of the recipe and added a sprinkle of Hymalayan pink salt, 1/8th tsp. powdered sage and 1/8th tsp powdered onion. It reminded me of cornbread dressing. It was so good!

    We generally don’t have much bacon grease on hand. Is it possible to use butter or some other fat to replace it?

    Made these to the recipe but added shredded cheese before the batter and after the batter. Add different spices to the batter also. Found that they are very crumbly but the cheese help keep them together. Did anyone find that they were crumbly?

      I have never added any cheese since we are dairy free and my waffles have never come out crumbly.

    So yummy! I really like these better than the cheese ones. And they don’t taste eggy at all – just plain taste unless you add stuff. I made some with garlic/oregano spices and was going to use them for pizza chaffle – but used them for hamburger buns – Excellent! And nope, mine were not crumbly at all.
