Keto Gingerbread Cookies

I love gingerbread cookies.

I made some a few weeks ago that were made with coconut flour.  I thought had a great taste but were a little dry so I decided to improve the recipe.

Keto Gingerbread Cookies

These Gingerbread Cookies taste AMZING! They are moist and oh so good!

Ingredients

  • 121 grams almond flour 1 cup
  • 40 grams xylitol w/4 cup any granular sweetener
  • 1 TBS ginger
  • 1 TBS cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp maple extract
  • 1/2 tsp vanilla extract
  • 2 egg whites

Instructions

  • In a mixing bowl, combine the dry ingredients
  • In a separate bowl, whip the egg whites to a soft peak
  • Add the maple and vanilla extracts to the egg whites and whip to stiff peak
  • Gently fold the dry ingredients into the egg whites
  • Use a spoon of cookie scoop and drop small mounds of dough onto a parchment paper lined baking sheet (about 1 TBS)
  • Bake at 325 F for 15-18 minutes
  • Remove from oven and let cool on pan for 5 minutes
  • Transfer the cookies to a wire rack to complete cooling
  • Taste and enjoy!
