Gingerbread Snowball Cookies

I love gingerbread cookies and I was really excited to find a recipe I could make keto.

This recipe uses both almond flour and coconut flour.  I am not a big fan of coconut flour but I thought I would try it since I miss gingerbread cookies.

These cookies had a great gingerbread taste and I will probably make them again.

Keto Gingerbread Snowball Cookies

These Gingerbread Snowball Cookies have a great flavor and are made with both almond and coconut flour. Great cookies for Christmas time!

Ingredients

  • 121 grams almond flour 1 cup
  • 60 grams coconut flour 1/2 cup
  • 87 grams coconut oil melted
  • 1/2 tsp maple extract
  • liquid stevia
  • 1 TBS ground ginger
  • 1 TBS ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  • Preheat oven to 350 F.
  • In a large mixing bowl, combine the dry ingredients (almond flour, coconut flour, ginger, cinnamon, nutmeg, and salt) and mix well
  • In a separate bowl, combine the melted coconut oil, maple extract, and stevia or any liquid sweetener.
  • Add the wet ingredients to the dry ingredients and mix well until a dough forms
  • At this point, add any nuts or chocolate chips if you are using them
  • Take about 1 TBS of dough and form into a ball about 1"
  • Place cookies on a parchment lined baking sheet
  • Bake for 10-12 minutes or until they are light golden in color
  • Remove the pan from the oven and let sit for a few minutes
  • Transfer cookies to a wire rack to cool completely

Notes

You can add chopped nuts or chocolate chips to the cookies.
