Crab Bisque

On our last vacation, we had She Crab Soup for the first time and it was amazing.

This is not exactly She Crab Soup, but is a delish Crab Bisque.  It was so good I will definitely be making this more often.

I made it dairy free since we try not to have dairy, but subbing heavy cream for the coconut cream would work great.

Keto Crab Bisque - Dairy Free Option

This Crab Bisque is so creamy and delish - everyone will love it. Can be made with heavy cream or dairy free

Ingredients

  • 2 TBS olive oil can use butter if not dairy free
  • 6 grams minced onion 1/4 cup
  • 8 oz clam juice
  • 2 cups chicken stock
  • 1 can coconut cream or 2 cups heavy cream
  • 1/2 tsp worcestershire
  • 1/2 tsp nutmeg
  • 1 tsp old bay seasonin
  • 1 lb lump crab meat
  • 1/4 tsp cayenne pepper

Instructions

  • In a large stock pot, saute the onion in the olive oil. Cook until soft (3-5 minutes)
  • Add clam juice and chicken stock to the pot and bring to boil
  • Reduce the heat and add the coconut cream and heat until it is warm/hot but not boiling
  • Add the worcestershire, nutmeg, old bay, cayenne,and half the crab meat
  • Simmer for 5 minutes
  • Ladle soup into bowls and add remaining crab meat.
  • Enjoy!

Notes

The clam juice and chicken stock can be any combination to equal 3 cups.
Any seafood stock can be used.
