Keto Jelly Roll
I loved making my Keto Chocolate Swiss Roll and wanted to make a vanilla flavored roll.
I came up with a vanilla sponge cake recipe and made a Keto Jelly Roll.
I used Strawberry Jam that I had made as well as Italian Meringue.
It was absolutely amazing!!
Keto Jelly Roll
This delicious clean Keto Jelly Roll is made without any flour so it is nut free. The sponge cake is light and fluffy which makes this keto dessert very refreshing. Made with home made keto jelly and Italian meringue - it is a must try!

Ingredients
- 6 eggs separated
- 62 grams powdered xylitol or sweetener of your choice
- 30 grams egg white powder
- 1 tsp vanilla
- 1/2 tsp gelatin
Instructions
- Put 6 egg yolks in large mixing bowl
- Beat egg yolks until they become light and pale
- Gradually add the powdered sweetener while continuing to beat until mixture becomes light and cream colored
- Add the vanilla, gelatin, and egg white powder and beat until completely mixed
- In a separate bowl, beat egg whites until they form stiff peaks
- Gradually fold in the egg whites into the egg yolk mixture 1/3 at a time
- Fold until the egg yolks and egg whites are completely combined
- Line a jelly roll pan (1/2 sheet pan) with parchment paper
- Spread the mixture onto the pan smoothing out to even layer
- Bake in 350 F oven for 20 minutes or until toothpick comes out clean
- Remove the cake from the oven and cover with aluminum foil
- While the cake is cooling, mix up the Keto Italian Meringue (http://ketonaturopath.com/keto-italian-meringue/ )
- While cake is still warm, spread fruit jam over the cake (http://ketonaturopath.com/keto-fruit-jam/)
- Spread thin layer of meringue over the jelly layer
- Roll the cake to form the Jelly Roll
- Refrigerate for at least 1 hour
- Enjoy!
Notes
I made half of the Italain Meringue recipe and still had some left over for cookies
I used strawberry jam but will try with raspberry jam next time
This is a very light, refreshing clean keto dessert
