Dairy Free Keto Nacho Casserole
This dairy free version of my Keto Nacho Casserole is absolutely amazing. It has a pork rind crust so it is very low carb. You don't even miss the cheese. It's a hearty main meal that everyone will love!

Ground Beef Filling
- 1 lb ground beef
- 1/2 onion chopped
- 1/2 red pepper chopped
- 1/2 green pepper chopped
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp cilantro
- 1.25 oz sliced black olive
- 16 oz salsa
- 2 eggs
For the Crust
Combine pork rind flour, melted bacon grease, taco seasoning and salt
Press mixture in an 8x8" casserole or a pie plate
Bake at 375 F for 8 minutes
Remove from oven and cool while preparing the ground beef filling
Ground Beef Filling
In a skillet, brown the ground beef, onion, and peppers until the beef is no longer pink
In a large mixing bowl, combine the beef mixture, eggs, salsa, and spices
Mix well
Pour onto the crust and bake at 375 F for 30 minutes
The casserole will be bubbling so let it cool a few minutes before serving
Enjoy!
You can add more or less of the onion and peppers to suit your taste.
You can also add jalapenos if you like it more spicy hot
