Keto Coconut Pecan Frosting

- 14.5 oz coconut cream 1 can
- 8 oz butter 1 cup
- 1 tsp vanilla extract
- 200 grams xylitol 1 cup or any sweetener
- 190 grams shredded coconut 2 cups
- 250 grams chopped pecans 2 cups
- 2 tsp gelatin
- 6 egg yolks
In a medium sauce pan, which coconut cream, egg yolks, and xylitol
Add the butter and bring to boil over medium heat
Keep cooking and stirring until mixture thickens - 3-5 minutes - Do Noy Over Boil
Remove from eat and stir in vanilla, gelatin, coconut and pecans
Transfer to a mixing bowl and cool for 1 hour before frosting cake
