Put coconut milk in a small sauce pan and heat till bubbles form - do not boil but make sure the coconut milk is hot enough to melt the chocolate
Chop chocolate and place in bowl
When the coconut milk is heated, pour over chopped chocolate
Let sit for 5 minutes
After 5 minutes, stir the chocolate until all mixed
serve hot or cold
Notes
For a thinner ganache, use 8 oz coconut milk and 4 oz chocolate.I don't use sweetener since I am putting it on a cake that is sweet already but if you would prefer a sweeter ganache, use either liquid or powdered sweetener.
